Sigh. I had all the best intentions of going to the gym tonight, including plans with a friend to go to a class, a packed gym bag, and a perfectly adequate amount of calories + H2O throughout the day. But alas, I had a lot of work to finish up before leaving my office, and my friend had to bail, and I just didn’t make it.

That seems to happen to me a lot these days. The past few months, I mean. I think about how dedicated I was to working out in early 2009, and contrast it with now… it just feels a lot different, and I’m not sure what changed. My “funk,” or whatever it is, started last spring. I’m hoping that the changing of this year – decade – can jump start me a little bit. I’m fine as it stands right now, not terribly discontent or anything, but I still have a lot of goals to reach. And here I am languishing on my couch!

This struck me as a very bloggy meal tonight:

I say that especially because it’s something I probably wouldn’t have tried before I started reading food blogs! It reminds me of something that Meghann would make. Just one of those simple, pleasing dishes that stretches me a bit outside of my routine – well worth it.

I halved, de-seeded, and then roasted an acorn squash in a 350 degree oven for a half hour or so. Meanwhile, I cooked half a cup of quinoa and grilled a chicken jalapeno sausage on the Foreman. Once that was done, I mixed the quinoa and (chopped) sausage with about 3/4 of a green bell pepper and maybe 1/2 a cup of marinara sauce (arrabiata, my fave). Took the squash out, stuffed the halves (reserving some of the quinoa mix that didn’t fit for my lunch tomorrow), popped back into the oven for a bit, took ’em out, topped with pepper jack cheese, broiled, done! Yummm!
